I was also going to say Memphis. I went to high school in a Memphis suburb, although most of my BBQ explorations happened after I moved away, when I visit my parents.
2 of my favorites are relatively new, but still over 20 years old. Central BBQ has the best ribs IMO, and Germantown Commissary has some non-traditional (for Memphis) dishes including an excellent Brunswick stew.
It's really very hard to narrow down all the options. Cozy Corner (Cornish hen), Bar-B-Q Shop (BBQ spaghetti, a signature side dish in Memphis), Rendezvous (touristy but very good)...and Payne's is the one I really should've been to at this point but haven't.
